  3. In a small saucepan, add 1/2 cup sugar with 3 tbsp water. Cook over medium-high heat, swirling occasionally, until the sugar turns into a deep amber caramel. Quickly pour evenly over the figs in the cake pan. Set aside.

  4. In a medium bowl, beat the butter (1 stick) with 1 cup sugar (either by hand or with a hand mixer using medium-high speed) until lightly and fluffy. Beat in the eggs one at a time. Add molasses ( cup), too.

  5. Sprinkle over baking soda (¾ tsp), salt (½ tsp), spices (½ tsp), and flour (1 ¼ cups). Mix in until just incorporated. Then mix in the Greek yogurt ( cup). Spread batter evenly oven the plums. Bake for 40-45 minutes, or until cake feels firm to the touch, is deep golden, and a toothpick when inserted comes out almost completely clean. The cake will sink as it rests.

  6. Let cake cool for 15-20 minutes. Run a butter knife around the edge of the pan. Carefully flip the cake onto a serving platter. Reveal the beautiful cake, peel off parchment if necessary, replace any figs that stuck to the cake pan.

  7. Beat all the whipped cream ingredients in a bowl until thick. Either serve alongside the warm cake, or wait for the cake to be completely cool (about 1 hour) and pile in the center with more figs. Garnish with a honey drizzle and rosemary.
