Make the Cake
In a small bowl, mix together cake flour (⅓ cup), cornstarch (1 Tbsp), and baking powder (1 tsp).
In a medium bowl, add egg whites (3), 3 tbsp sugar, kosher salt (½ tsp), and lemon juice (1 tsp). Using a hand mixer, beat on medium-high speed until mixture holds stiff peaks.
In a large bowl, add egg yolks (3), 2 tbsp sugar, vanilla extract (2 tsp), and oil (2 ½ Tbsp). Beat on medium-high for 2 minutes.
Fold in 1/3 of the egg whites into the yolk mixture, followed by 1/2 the dry ingredients, another 1/3 of egg whites, the remaining dry mixture, and then the remaining egg whites.
In a parchment-lined and lightly greased quarter sheet tray, add the batter. Smooth out.
Bake at 350°F for 10-11 minutes, until cake is light golden and springs back when the center is poked.
After letting cake cool for 10 minutes, with a knife, separate the cake from the edges of the pan.
Flip cake onto a cutting board lined with parchment paper. Roll the cake into a spiral and let cool completely.
Assembly
In a large bowl, add heavy cream (1 ½ cups), mascarpone (½ cup), kosher salt (½ tsp), and freeze-dried strawberry powder (2 oz). Beat on medium-high speed with hand mixer until thick and holds stiff peaks.
Unroll cake and remove top sheet of parchment. Spread strawberry jam (½ cup) evenly over the cake followed by 1 1/4 cup of the strawberry whipped cream.
Using the parchment to help you, roll the cake up tightly into a spiral.
Transfer cake to serving platter. Decorate with extra strawberry whipped cream and fresh strawberries.
