Instructions

  1. Preheat oven to 350°F. Bring 1 qt. water to a boil in a tea kettle or pan.

  2. Add granola (1 cup) to a large Ziploc bag, press out air, and seal. Bash with a rolling pin or pan to smash granola into fine crumbs. Pour butter (6 Tbsp) and salt (½ tsp) into the bag and shake it around to distribute. Then dump into the cake pan and press down into a solid bottom layer. Bake for 10 minutes then let cool.

  3. Lower oven heat to 325°F. Wrap bottom of the cake pan in 2 large pieces of aluminum foil.

  4. In a large bowl, add the cream cheese (8 oz), goat cheese (11 oz), sugar (¾ cup), vanilla (2 tsp), salt (1 tsp), and lemon zest (1 Tbsp). Beat with a hand mixer on medium-high speed to combine completely, just 1 minute.

  5. Add the eggs (4 large). Beat with mixer on medium speed just to combine. Then add the lemon juice (2 Tbsp) and heavy cream (¼ cup) and beat just to combine. Dump onto crust. Lightly bang on a counter a couple times to burst the air bubbles. Then transfer to a pan large enough to hold the cake pan. Pour boiling water around the cake pan to come halfway up. Then transfer to the over and bake for around 35 minutes, until the cake center just wobbles when you jiggle it.

  6. Let cool in the oven for 1 hour with the door ajar. Then transfer to the fridge covered for at least 2 hours, up to a few days.

  7. In a large bowl, toss strawberries (32 oz), salt (¼ tsp), honey (3 Tbsp), and balsamic (2 Tbsp). Let sit for about 15-30 minutes. Then pile onto cake and garnish with mint.
