Instructions
In a medium bowl, soak your mussels (1 lb) for thirty minutes. Set in the refrigerator.
In a large pan, heat olive oil (¼ cup) over medium high heat.
Add the onion (1), bell pepper (1), and garlic (6 cloves). Season with salt and pepper. Cook until tender, 8-10 minutes.
Add the tomatoes (2 medium), paprika (2 tsp), and saffron (1 pinch). Season with salt and pepper. Cook for another 8 minutes, until the vegetables start to stick to the pan.
Deglaze with the white wine (¼ cup). Let it cook out for 1 minute.
Then add half the parsley, rice (2 cups), and chicken broth (5 cups). Season with salt and pepper. Bring to a boil, then reduce heat to medium-low.
Cook rice for 18 minutes without stirring.
Top the paella with the peas (½ cup), shrimp (1 lb), mussels (1 lb), and squid (½ lb). Season with salt and pepper.
Cover with a lid or tin foil and cook for 6-8 minutes.
Check to see if shrimp is opaque and mussels have opened. If not, continue cooking.
Garnish with lemon wedges and additional parsley.
