My Ideal Bacon, Egg, and Cheese
Prosciutto, egg, and Parmesan come together in this bold, elevated take on the classic breakfast sandwich.
Oct 28, 2025
This is not your average bacon, egg, and cheese. With crispy prosciutto in place of traditional bacon and nutty Parmesan as the only cheese, this sandwich brings a savory, Italian-inspired twist to a breakfast classic. Layered with soft scrambled eggs and served on a warm, toasted bun or roll, it’s simple, satisfying, and full of flavor.
Why Prosciutto Works
Prosciutto delivers the salty crunch you expect from bacon but with a more delicate texture and refined flavor. When lightly crisped, it adds a savory, umami-rich bite that pairs perfectly with fluffy eggs and sharp Parmesan. It’s a leaner, more elegant choice that elevates the whole sandwich.
The Role of Parmesan Cheese
Parmesan may not melt like other cheeses, but its bold, salty flavor adds complexity and depth. Grated directly into the eggs or layered on top, it creates a savory punch that enhances every bite. The cheese balances the richness of the prosciutto and the creaminess of the eggs, making it the standout ingredient in this version.
Soft Scrambled Eggs Done Right
The eggs are cooked low and slow to achieve a soft, creamy texture. A touch of butter or cream helps create a luxurious base for the sandwich. Mixed with Parmesan and seasoned simply, the eggs are flavorful enough to shine on their own yet balanced to let the prosciutto and bread complement them.
Pick the Perfect Bread
The bread should be toasted until golden but still soft enough to bite through. A brioche roll, ciabatta, or even a crusty sourdough works well. Toasting adds texture and flavor while helping to hold the sandwich together without getting soggy.
A New Breakfast Favorite
Whether you’re making it for a relaxed weekend brunch or a quick weekday bite, this prosciutto, egg, and Parmesan sandwich feels both special and approachable. It’s rich but not heavy, familiar but fresh. Once you try it, it might just replace your go-to bacon, egg, and cheese for good.

Instructions
Bake half the prosciutto (4 oz)in a 350°F oven on a parchment lined baking sheet until golden and crispy, about 10-12 minutes.
Whisk eggs (5) with 2 tbsp water until completely combined.
Preheat a non-stick pan over medium heat. Once hot, add the butter (2 Tbsp) and let melt. Then add the eggs and using a rubber spatula, gently stir the eggs to create larger curds. Once 90% cooked, tip onto a small plate to prevent overcooking. Season with a wee bit of salt ( to taste) and black pepper ( to taste) (the meat and cheese are both salty).
Stack your sandwiches with egg, lots of grated parmesan cheese ( to taste), some of the crispy prosciutto, and some of the not crispy prosciutto.
