  1. Bake half the prosciutto (4 oz)in a 350°F oven on a parchment lined baking sheet until golden and crispy, about 10-12 minutes.

  2. Whisk eggs (5) with 2 tbsp water until completely combined.

  3. Preheat a non-stick pan over medium heat. Once hot, add the butter (2 Tbsp) and let melt. Then add the eggs and using a rubber spatula, gently stir the eggs to create larger curds. Once 90% cooked, tip onto a small plate to prevent overcooking. Season with a wee bit of salt ( to taste) and black pepper ( to taste) (the meat and cheese are both salty).

  4. Stack your sandwiches with egg, lots of grated parmesan cheese ( to taste), some of the crispy prosciutto, and some of the not crispy prosciutto.
