  1. Preheat oven to 400°F (convection, ideally). Line a half-sheet tray with parchment paper.

  2. Drizzle with 3 tbsp of olive oil and sprinkle over parmesan cheese (1 cup). Set aside.

  3. Halve the potatoes (3 lb) length-wise. Lay a potato half inside a pair of chop sticks and make a series of cross-wise cuts across the potato, using the chop sticks to ensure the knife does NOT cut the potato all the way through. Transfer potatoes cut-side down to the prepared baking sheet.

  4. Drizzle potatoes with 3 tbsp of olive oil. Season with salt ( to taste), pepper ( to taste), garlic powder (2 tsp), and herbs (2 Tbsp). If you'd like, add a little dot of butter (3 Tbsp) to the top of each potato.

  5. Bake for 40-50 minutes, or until potatoes and parmesan are golden brown and the potatoes are tender.
