Instructions
Bring a large pot of water to a boil. Season well with salt ( to taste).
Drop in the green beans (2 lb) and cook until just al dente, about 3-5 minutes (best way of checking is by tasting one).
Drain. Lay out on a kitchen towel to dry and cool down.
In a large bowl, add the red onion (½), dill (1 bunch), poppy seeds (3 Tbsp), olive oil (2 Tbsp), lemon juice (½ lemon), yogurt (⅓ cup), and then the green beans.
Stir with tongs to coat. Season with salt and pepper ( to taste); taste for seasoning.
Ideally, chill for at least 30 minutes as it's best served cold.
