Burger
In a food processor, add the garlic (3 cloves), scallions (3), parsley (1 ½ cups), salt (1 tsp), pepper ( to taste), za’atar (1 Tbsp), 1/4 cup olive oil, and cayenne (½ tsp). Pulse until it resembled pesto.
Add the chickpeas (8 oz). Pulse until finely chopped; it should resemble a fine meal.
To a microwave safe bowl, add the flour (¼ cup) and water (⅓ cup). Stir to combine.
Microwave at 10 second bursts, stirring in between, until mixture thickens and looks like pudding.
Stir in baking powder (2 tsp).
In a large bowl, mix together the falafel mixture with the paste. Set aside.
Tzatziki Sauce
In a medium bowl, combine the Greek yogurt (1 cup), parsley (¼ cup), cucumber (¼ cup), olive oil (1 Tbsp), salt (¼ tsp), and pepper ( to taste). Refrigerate until ready to use.
Cooking & Assembly
In a large pan over medium-high heat, add 1/4 cup of olive oil.
Once oil is shimmering, use a 1-cup measure and pack in falafel mixture 2/3 of the way full. Plop mixture carefully into the pan. Repeat with remaining falafel mixture.
Cook patties for 4-5 minutes on each side, until very golden.
Assemble the burgers. Smear the bottom of the buns (4–5) with the tzatziki. Then add the falafel patties, sliced cucumbers, pickled red onion, and the top bun. Skewer with a large toothpick and serve.
