  1. In a medium bowl, add crab meat (1 lb) and crushed saltines (20). Gently stir together.

  2. In a small bowl, whisk mayonnaise (½ cup), egg (1 large), Worcestershire (1 Tbsp), hot sauce (2 tsp), pepper ( to taste), parsley (3 Tbsp), and chives (3 Tbsp).

  3. Dump over crab mixture and gently stir together.

  4. Cover and refrigerate for 30-60 minutes.

  5. Preheat a large pan over medium heat. Add the neutral oil (3 Tbsp).

  6. Using a 1/2 cup measuring cup, portion out 6 crab cakes and add to the pan.

  7. Sear on each side for about 5 minutes, or until deep golden brown.

  8. Serve with lemon wedges.
