Bourbon Whipped Cream and Assembly

Instructions

  1. Add the chocolate (11 oz) and butter (8 Tbsp) to a microwave safe bowl.

  2. Microwave at 50% power at 45 second increments, stirring in between, until just fully melted. Set aside and let cool.

  3. In a large bowl, add the egg yolks and 1/3 cup granulated sugar. Beat with electric mixer on high speed until very light and fluffy. Set aside.

  4. In another large bowl, add the egg whites, salt (½ tsp), and lemon juice (2 tsp).

  5. Beat with electric mixer on high speed, gradually streaming in the remaining 1/3 cup granulated sugar, until the egg whites hold medium peaks. Set aside.

  6. Pour cooled chocolate mixture into the egg yolk bowl. Fold with a spatula to evenly combine.

  7. Fold in the egg whites in 3 batches into the chocolate mixture until just combined.

  8. Gently pour into a serving dish, level, cover with plastic wrap, and refrigerate for at least 2 hours or up to 2 days.

  9. Add the heavy whipping cream (1 ½ cups), bourbon (2 Tbsp), and powdered sugar (¼ cup) to a medium bowl.

  10. Beat with electric mixer on medium-high speed until stiff peaks hold. Transfer to a piping bag if you'd like.

  11. Pipe whipped cream on top of chocolate mousse or spoon on top. Garnish with cherries and flaky salt.
