Instructions
Preheat oven to 350°F. Spray non-stick cooking spray into your cake pan, dust with flour, and set aside.
In a small sauce pan, melt and then brown the butter (1 stick) over medium-high heat until golden. Pour into a large bowl. Whisk in the masala chai (3 Tbsp) and espresso powder (1 Tbsp) to bloom the spices.
Add the light brown sugar (¾ cup) and whisk to combine. Crack in the eggs (2 large) and whisk for 1 minute until lightened. Whisk in the baking powder (2 tsp), baking soda (½ tsp), salt (1 tsp), Greek yogurt, (¼ cup) and milk (¾ cup) until combined. Whisk in the almond flour. (¾ cup)
Switch to a spatula and fold in the all purpose flour (1 ½ cups) until no dry spots remain. Dump into the cake pan and level the batter. Bake until the cake has risen, is set, and a toothpick comes out clean. Remove and let cool completely, about 1 hour.
When ready to serve, add all the latte whipped cream ingredients to a large bowl and whisk by hand or with an electric hand mixer until stiff peaks form. Pile all the cream onto the center of the cooled cake and spread effortlessly across the cake. Decorate how you wish. Cake can be kept covered in the fridge for 3 days.
