Remove the outer couple tough leaves of the cabbage (1 medium). Cut in half. Then cut into quarters. Cut out the core of each quarter cabbage. Thinly slice (as thin as possible by hand, or use a mandolin), each quarter of cabbage. Add to a large bowl.
Thinly slice the onions (2) and also add to the bowl.
Dress vegetables with the vinegar (¾ cup), olive oil (2 Tbsp), salt (2 tsp), pepper ( to taste), and honey (2 Tbsp). Toss evenly.
Cover and refrigerate for at least 1 hour.
Can be refrigerated for up to 2 days.
Before serving, toss in the fresh herbs (1 cup).
