  1. Preheat oven to 425°F. In a small saucepan, add the cream (1 ½ cups), butter (4 Tbsp), and bay leaves. (2) Turn to low and let butter melt while you turn to the squash.

  2. Peel the squash (3 medium). Split in half. Scoop out the seeds. Cut into 1/3" thick slices (if the shapes looks like a ? or a C, cut them in half again so they're easier to arrange).

  3. In the baking dish, lay one layer of the squash as evenly as you can. Sprinkle with half the onion. Season with salt and pepper, then top with a third of the Gruyere cheese (8 oz). Repeat again.

  4. Lay the final layer of squash on top. Top with remaining Gruyere cheese and add the parmesan (2 oz). Cover with aluminum foil. Bake for 30 minutes until the squash is mostly tender. Sprinkle over with sesame seeds if you'd like. Continue to bake for another 20 minutes, or until the squash is deeply browned and the cream has bubbled and reduced slightly.
